I am so proud of this idea. I love crumble of any kind. It is possibly my favourite dessert.
Crumble in a Cup
Handful of oats
1 tbsp vegetable Oil
1 tbsp ground almonds
1 tbsp brown sugar
Fruit (I used 1/4 cooking apple and some frozen mixed berries)
So I kind of eyeball this one whenever I do it. I am a big fan of the actual crumble bit so I tend to make that layer pretty big, depends on how you like it. So in a small bowl put in the oats, then the ground almonds, then some brown sugar. All depends on how big your cup is going to be. Sprinkle in some cinnamon. Pour in the oil and mix it up. You want enough oil so that the dry ingredients just start to stick together like bread crumbs.
In the actual cup put in your chopped apple and berries, drizzle some honey on top. I wouldn’t add the honey if you were using eating apples. Pour the crumble mixture on top and stick the cup in the microwave on medium heat for 2 minutes. Please make sure it is a microwave safe cup.
Serve with ice-cream or cream or it is also lovely on it’s own. Just be careful not to burn your tongue!
So this was my breakfast one of the days. Basically it consisted of porridge made with soya milk and I threw in a chopped up pear before I put the bowl in the microwave. The pear kind of stewed while the porridge was cooking and then when it was ready I added honey and sprinkled on some cinnamon.
These cupcakes are extra amazing because they have an apple and cinnamon filling. Too delicious! I actually tried one of these and I may be biased but it was unreal.
Apple and Cinnamon Cupcakes (Makes 12)
113g unsalted butter
50g packed brown sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 medium cooking apple, peeled and chopped
Preheat the oven to 180’C. Cream together the butter and sugars. Mix in eggs one at a time. Beat on high for about 2 mins. Sift in the flour, baking powder, salt and cinnamon. Add the milk just until incorporated. Gently fold in the apples. Do not over mix! Bake for 17-19 mins.
1 large cooking apple, peeled and chopped
2 tbsp butter
1 tsp vanilla
1 tbsp milk mixed with 1 tbsp corn flour/ cornstarch. I only just figured out that they are the same thing.
In a medium pan, melt the butter on medium-high heat. Add apple, sugar, vanilla and stir. Cook for about 5 mins until bubbling. Add the milk and cornstarch and bring to a bubble. Cook for 1-2 mins until the mixture thickens. Remove from heat and continue to stir for 1 minute. Wait until cool to fill the cupcakes.
For the icing I used my usual buttercream recipe which I don’t really have a proper recipe for because I always just eyeball it. I did add in any remaining apple filling to the icing this time though.
